I personally don’t drink coffee, but those of you who do, try the New England Coffee or anything Kona. If you want to use heavy cream, please make sure it has no carrageenan, mono & diglycerides, as well as polysorbate 80, because these may cause digestive irritation or bloating, which is not ideal if you want clean eating and may affect gut health. Organic heavy cream is a better choice. If it just says cream, you’re in good shape.
Crepes and Cheesy Eggs are Favorite Recipes.
This is something we love to share and while many know what a Crepe is; but the Options are Larger than most realize. And once you experience how fun, easy and full of culinary options they offer, they can become a steady go to for any family.

Crepes:
This is the best recipe I would like to share. It is the same recipe that has been around for roughly 20 plus years now. It is great to “dip, cook, and release”. They do fold or roll well. And they keep for weeks in the freezer, and days in the refrigerator. Though with a large family, they may never last more than the next day.
The batter can be made and used immediately. If you want more tender crepes, let the batter sit for a few hours. Many have made it ahead of time and put it in the fridge overnight when making it for many people. You can also make multiples of double batches. Because of the decades (plus) of experience, making double batches is best. Never triple or more. It just seems to be the right balance to do double batches, but stick to the measurements for each batch!
- 1 cup all-purpose flour
- 2 eggs
- 1/2 cup milk
- 1/2 cup water
- 1/4 teaspoon salt
- 2 Tablespoons Butter (or margarine – though we prefer Butter in this always) – Melted.
For Smooth Batter – Use the Blender/Mixer!
Using a Blender or an Emersion blender (as seen in the presentation video), add all the ingredients in the order stated above. You want to make the batter smooth. There should be no lumps in the flour. Be sure to use a spatula to scrape the bowl or blender to ensure the flour is mixed in well.
If you are mixing by hand, add the flour and eggs first, then the salt, and blend while adding the water and milk slowly and gradually. The Blender is highly recommended for this process. Consistency is important; it should be the thickness of thick heavy cream. Many live at a high elevation and have a good feel for the flour. In most areas, it is recommended to level off the cups of flour with a knife or straight edge.
We recommend a Crepe Maker. The closest one to ours is found by going here. This is cordless and comes with a batter dish and spatula, which is a Great Value. It is also an incredible gift for anyone who loves Crepes. Who doesn’t?
Fantastic Cheesy Eggs:
This is absolutely a great hit for a weekend brunch. It can also be a great addition on those hectic nights.
- Eggs: I like two to three at a time, but as many as you think you will need for the family. 4, 6, 8, 10. Depending on their consumption, there may not be anything left even when you overprepare.
- Water: 1 ounce of water per 4 eggs. This is a new twist, but you never know until you try it.
- Cheese: I like using the Block cheddar cheese. Grated it myself. Thin is best. You do not want thick slices; they don’t melt as well as needed. Cheddar, Gouda, or Swiss. Whatever your heart desires! The Cheddar/Monterey Jack mix works well.
- Salt and Pepper
- PAM Non-Stick Cooking Spray (avocado or olive oil works well also)
Use the Blender/Mixer!
Crack the eggs into your mixing bowl. Add water to balance out the eggs. 1 ounce of water per 4 eggs. This new twist adds fluff and helps to fill up the Crepes with an airy bite each time. Mix the eggs and water to a smooth consistency by blending them, as seen in the videos, with an Emersion Blender. You can get one here. Handy, easy to clean, and put away. Highly recommended.
Turn on the burner to Medium-High heat. Depending on your stove, you may need to adjust your stove top. Once you have the heat adjusted and your pan ready for the burner, follow the steps below in order.
- Spray the pan with the Pam (avocado or olive oil) Cooking Spray. Lightly, even with a great non-stick pan. You will see a difference when this is not used.
- Put the pan on the Flame! And then sprinkle the pepper to taste. Let the warming pan start to heat the pepper.
- Add salt to taste. Use only a little, as the cheese comes with salt. As you adjust and do this, you are free to do as you please.
- After 10-20 seconds, add some cheese. Let it begin to melt.
- Once melting, not melted, pour the blended eggs into the pan.
- Stir and add more cheese as the eggs are being cooked to perfection. Prefer not being too runny, but yet moist, not overcooked.
- Save some cheese to melt on top. Makes for a nice presentation and gooey-ness when cut and added to the flat crepe before rolling or eaten alone with some bacon or sausages.
Roll into Crepes while Cheesy Eggs are still Hot!
Now you are ready to add to a crepe and be rolled for your eating enjoyment. Amazing! It is delicious. Easy, even when there is someone who says I don’t like eggs, will be pleased. They may even start to ask for it more and more, to your surprise.
